Chewy Cranberry Oatmeal Cookies

INGREDIENTS:
  • 1/2 Pound (2 sticks)  butter, softened
  • 1 Cup firmly packed brown sugar
  • 1/2 Cup granulated sugar
  • 1 Teaspoon vanilla
  • 1 1/2 Cup all-purpose flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon ground cinnamon
  • 1/2 Teaspoon salt (optional)
  • 3 Cups Quaker oats (I use the 1min oats)
  • 1 Cup -2 cups dried Cranberries (I use ocean spray craisins) 
 PREPARATION: Heat oven to 350°F. In large bowl, beat together margarine and sugars with electric mixer until creamy. Add eggs and vanilla; beat well. In medium bowl, combine flour, baking soda, cinnamon and salt; mix well. Add to margarine mixture; mix well. Stir in oats and cranberries; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 15 minutes or until light golden brown.(depends on your oven) Cool on cookie sheets; remove to wire rack.
